Muffin Tin Meal- Cleaning out the fridge

We weren’t supposed to be home at all last week, but unfortunately a virus had different plans for us. We came home 3 days sooner than we had planned and I didn’t get to do a Muffin Tin Meal with my nephew as I’d hoped. However, I did throw together something from the bits and pieces of leftovers still in the fridge that N had not eaten yet. It’s not much, but it was lunch! πŸ˜‰

Cleaning out the fridge

Plumcots, Gogurt, Brisket, Corn, String cheese (cut into disks), Black olives

Both kids scarfed the olives and gogurt (I even had to squeeze out another half a tube for each of them), but this is no surprise. They never turn down either of those things. Lucas also ate his cheese and some corn. Then they both ate a few bites of plumcot when we put some whipped cream on them. Once the whipped cream was gone, though, they stopped eating them. No biggie. I ate them for them! LOL

  3. I love a good clean out the fridge muffin tin. I have never had plumcots before what do they taste like???

    • They mostly taste like plum, but maybe a little sweeter? It’s been a while since I’ve had either a plum or an apricot, so I’m not sure I can adequately describe the flavor. It’s definitely more firm than a plum (but mostly looks like one). They’re quite yummy. We found them at Central Market. I haven’t seen them at my normal grocery store.

  8. I call mine the “scrounge muffin tin” as in, I am scrounging around the cupboards and fridge for goodies to put in!
